In the summer I sit under it in the shade, in September I go through the ritual of racing the squirrel to get the nuts which I distribute to my neighbours and friends and in the autumn the leaves go bright yellow and it looks stunning. My Granny (of Scottish descent from Belfast) used to make a fairly dry bread pudding in a loaf tin with stale bread, eggs and milk, raisins and tons of cinnamon. Unfortunately, she has passed on, and I've never seen any recipes that were alike. It was quite a heavy and dense loaf, much like a fruitcake.
